As it stands projects are listed in alphabetical order.
Could there be another option where we could change the order to most recently created, also?
So the most recent projects are at the top & and the oldest ones at the bottom?

I use a comma or something if I want to keep things at the top. Some issues can be worked around much easier than creating a feature request. Limitations breed creativity and remove distractions! 
From what I remember there’s no clock and all the folders have the same date of creation.
So you need to rename manually and find an order that works for you.
Personaly, I use 01-, 02-, 03- and some on.
You might use 001- or 0001- if you’re very productive lol
