Am I correct to assume that If you decide to use all 8 direct outs, then the 2 mix outs are not needed for anything and therefore would not need to be connected for anything?
Apologize if this is super-obvious.

You are correct. And if you want to use the headphones at the same time you have to go into the settings and select them in the settings.
