Can anyone recommend (Apple) software that can automatically convert samples of various sample rates to 48,000?
I know I can do this manually from my DAW but would love to automate this process.

Try XLD, Izotope RX or DB Power Amp
There is a mac app store conversion tool called switch Audio converter that does batch conversion pretty well. Its not perfect, but it definitely does the job.
